Festive fish, jumping dolphins, frolicking porpoises – all in bright, colored lights against the clear night-time sky, are the stars of McDonald’s Holiday Lights at the Beach, a holiday-themed light display at the Virginia Beach oceanfront! They are joined by Santa, elves, and a 40-foot tall Christmas tree erected on the beach and in the beautiful parks along the Virginia Beach boardwalk. It’s the only time of the year that cars get to drive right on the boardwalk! For over 30 blocks, almost 40,000 vehicles a year make the trek through this holiday wonderland.

Holiday Mail For Heroes is here again! This year, we are teaming up with our friends at Pitney Bowes for the third time to send holiday cards to service members, veterans, and their families. This is a great way to give back this holiday season - by sharing your kind words and thanks with those who have given a great deal to their country.

We will begin accepting cards NOW. Send in your cards to the address below, and please read the guidelines carefully!

All cards must be postmarked no later than Monday, December 7th. Cards postmarked after this date will unfortunately be returned to the sender. This deadline ensures enough time to sort and distribute cards before the holidays.

After the mailbox closes, the cards we received will be screened for hazardous materials by Pitney Bowes and then reviewed by Red Cross volunteers working around the country. Then, the cards are sent out to recipients in time for the holidays.

Recipe Sunday: Spinach & tortellini soup YUMMY!

Spinach & tortellini soup

Ingredients:
3 to 5 slices of chopped bacon
1 small onion, chopped
2 garlic cloves, minced
6 cups of chicken broth
2 packages of fresh or frozen cheese tortellini
10 ounces of frozen spinach, thawed
Parmesan cheese (optional)

1. Cook the bacon over high heat in a Dutch oven or large saucepan until crisp.
2. Add the chopped onion to the bacon and cook until the onion is soft. If you do not have a fresh onion, frozen chopped onion works great (use about cup to cup).
3. Stir in the minced garlic and cook for about 1 minute (until the garlic is translucent). Jarred, minced garlic is a nice alternative to fresh garlic (1 teaspoon will equal 2 cloves of garlic). The aroma should be getting nice by now.
4. Add the chicken broth and bring to a boil.
5. Stir in the tortellini and cook for 10 minutes.
6. Add the thawed spinach and cook for 3 more minutes.
7. Serve the tortellini soup piping hot in soup bowls. If desired, sprinkle fresh or grated Parmesan cheese on top.
   

This is a super easy recipe and tastes even better the next day!

I was in Newport News the other day so I went to Cost Plus.   While there I found out that they have a rewards program.  It's free to enroll and you can do so as you are checking out.

In the store you will see special sales that are only offered to rewards program members...this seems a little odd but no more that the grocery store members cards.

Plus after you sign up you will receive an email.  Confirm the information and you'll receive a coupon for 10% off your next in store visit.

Right now they have a special holiday offer (among others).  Spend $100 get $10 etc so this could work out if you planned on buying anything there during the holidays.
